We love tacos. Anything you can wrap in a corn shell has my vote. So when I’m eating low carb, this is hard for me because I love soft corn shells filled with all kinds of goodness but it’s stricly off limits. A few years back I stumbled on a low carb taco shell that claimed to be authenitc and low carb. I bought a case of them. I have been buying them ever since. La Tiara has been selling these shells for some time yet I have never found a website. I buy mine off amazon. I can easily eat 6 of these and not get thrown out of ketosis.
Tacos are an individual thing. In our house we have a hundred variations. I will give you one tip though that will take your typcial ground beef tacos to another level. Mix it with Chorizo sausage. I’m not talking about the smoked kind, I mean the uncooked kind you can buy in a roll. Use about 3 ounces per pound of beef. Another tip, add 8oz of plain tomato sauce in and let it simmer with whatever spices you want to use. We only do this with ground beef however.
We make tacos with everything, roast pork, left over pot roast (very good after you spice it up mexican style), shredded chicken. It’s hard to go wrong with a taco.
