For some reason when I start talking about eating a low carb diet, it gets some people all worked up. You have to decide what’s best for you and what works for you. For me, the science backs me up on this but I should say up front that not all carbs are evil. It’s a no brainer for me though that when I need to drop a few pounds, this is the best, most efficient way to do it and it’s a healthy way to do it. I’m not talking about low carb diet that eats just bacon, steak and eggs all day. You have to balance what you eat with other whole, clean foods like vegetables and some fruit.
I should make it clear that I’m not a doctor (legal notice: when starting a diet, please consult your medical professional and not a blog). I am just a woman who has made a lot of poor choices in her diet over the years but this clicks for me. It makes me feel better. Here are some things I believe:
Fat is not created equal- growing up I remember reading about how you shouldn’t eat avocados because they are so high in fat. Fat was evil! When people began to vilify fat in the late 80’s, early 90’s it seems like everything went down hill from there. Fat free and low fat became the new diet standard. Never mind that they loaded everything up with stripped down simple carbs and sugar. Eating them only made you crave more and the cycle of bad eating begins. I know things are more complex than this. I now eat avocado almost every day in some capacity. I also include olive oil when I can, non processed and cold pressed if I can get it. I even put a teaspoon of walnut oil in my smoothies. Your body NEEDS good fat to function properly. To avoid them will only make your body compensate in other less efficient ways.
Egg yolks should be enjoyed and often. I giggle when people only get egg white omelets. The yokes are such a perfect blend of vitamins and nutrients. Science has shown that the cholesterol in eggs is not harmful. From what I understand your body creates cholesterol when you eat things like saturated fat. Again, I eat eggs almost daily.
Examples of bad fat that I avoid like the plague- margarine, vegetable oil, anything that comes in a box and is supposed to be eaten. Some things like milk and broth come in boxes, I’m not referring to that type of boxed food. I also avoid high fructose corn syrup, anything hydrogenated and all food dyes when I can, particular yellow dye #5.
Low carb diets are NOT unhealthy. I suppose you could make it that way if you go crazy and eat only steak and bacon but I would never suggest that. A typical dinner for me might include broiled fish or roasted chicken, asparagus and a side of fruit (berries in particular are low in carbs and high in fiber, a great choice). I buy Paleo bread that is wonderful and have toast and eggs in the morning. Overall my diet is well balanced, high in fiber and nutrients. It works for me.
