This banana bread has been a staple in my home for over a decade. Easy to make, low in fat and everyone loves it.
- 1.5 cups of flour
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1/2 tsp cinnamon
The first step is to mix all the above dry ingredients together. I do it right in the measuring cup, no need to dirty another bowl.
- 2 egg
- 3 very ripe bananas mashed (or about 1 cup)
- 1/4 cup oil (I use olive oil but you can use anything on hand)
- 1/2 to 3/4 cup sugar
In another bowl, mash your bananas (I use a potato masher for this, works great), then add the oil, sugar and finally the egg . Pour in your dry ingredients and mix until everything is just incorporated. As with anything you are baking, don’t over mix.
Place in your favorite cooking vessel and bake. If you want you can add stuff on top. For example, for the picture shown in this article, we added a small handful of chopped pecans and a light sprinkling of brown sugar.
Put in your pre-heated 350 degree oven for about 35 minutes.
